Chicken Vegetable Soup

Hearty and Satisfying!!

1  rotisserie chicken carcass with 1/2 of the meat

2 stalks of celery, diced

3 carrots, thinly slice

1/2 med. chopped onion

1 cup fresh green beans

3 cloves crushed garlic

2 chicken bullion cubes

1/2 cup fresh parsley

1 cup shredded cabbage

3 peeled and diced potatoes 

1 can stewed tomatoes (chopped)

1/2 of a sliced lemon

2 teas. dried Italian seasoning

1 teas. Mrs. dash seasoning

1 teas. salt 

1/2 teas. pepper

In a large pot put in chicken and cover 1/2 full with water. Simmer for 20 min. Take out carcass and shred off chicken (set aside).

In broth, add all other ingredients except diced potatoes; simmer for 15 min. Then add potatoes and simmer for another 15 min. Take off heat, then add chicken.

So so yummy!!  I had it with buttered crackers :)  Eat and Enjoy!!
