Cucumber Salad


So bright and refreshing!
2 cucumbers (peeled and sliced thin)
1/2 onion (sliced thin)
3 tbsp. chopped fresh parsley (optional)
1/4 cup rice vinegar
1/4 cup water
juice of half a lemon
2 tbsp. oil (I used 1/2 olive and 1/2 veg.)
1 tbsp. sugar
dash of salt,  pepper,  dill weed,  and Mrs. dash seasoning
Mix all together and stir well, refrigerate 1 hour

Cucumber Tomato Salad

                                                This is a refreshing salad!


Ingredients:
1 peeled and seeded cucumber
1 tomato
2 tbs. fresh parsley
2 green onion
Juice of one lime
1/2 teas. sea salt


Cut up vegetables as you like. I diced them. Then add lime juice and salt, stir together. Eat and enjoy. This is a great combination, with bright flavor. This is a good side dish or just by itself!  Double recipe so there will be more to eat!

Big Salad

Choose and create! Put what you want on your plate! A home mini salad bar. Great healthy eating! Fruit in your salad can be yummy.



I like salad! It looks beautiful when it is put on a big platter!
Serve your favorite dressings. Here is my Italian dressing recipe. 
I had this salad with my spaghetti meat sauce and garlic bread.

Ingredients:
lettuce
shredded carrot
sliced radishes
green onion 
chopped celery
sliced and seeded cucumbers
sliced tomatoes
bread and butter pickles
sliced wedges of oranges and apples
