Lentil Vegetable Soup


In 4 cups of water, boil 3/4 cup lentils with 2 bullion cubes for 15 minutes. After cooking lentils, then add 3/4 cup of diced carrots and 3/4 cup diced celery. Cook until veggies are slightly tender.
 
   

 As the lentils are cooking; in a pan, saute until tender,1/2  chopped onion and 5 chopped button mushrooms in 2 tbs. olive oil and 1 tbs. butter & (salt & pepper); then de-glaze pan with 2 tbs. sherry, then simmer for a min.
 Add 1 can chopped stewed tomatoes to lentils.
 Then add saute onion and mushroom mixture.

 Add 3 to 4 more cups of warm water.

 Add 1 chopped potato.  Simmer until potatoes are tender.
